AI and Allergen Safety: Where the Line Should Be Drawn
Speed and safety pull in different directions with allergen data, and restaurants need to know exactly where the line sits.

This isn't about distrust of AI, it's about matching the level of verification to the stakes involved.
Cross-contamination deserves its own category
Most of the discussion around allergen tagging focuses on what's actually in a dish, but cross-contamination is a separate and often harder problem. A dish can be free of a specific allergen in its ingredient list and still carry real risk if it's fried in the same oil as something that contains it, or plated with shared tongs on a busy line. No amount of reading a menu description will surface that, because it isn't a property of the recipe, it's a property of how your specific kitchen operates on a given night. This is exactly the kind of thing that has to come from a person who knows your kitchen's actual layout and habits, not from any system reading text.
What good documentation actually looks like
- A clear note on which dishes share a fryer, grill, or prep surface with common allergens
- A dated record of when each tag was last confirmed and by whom
- A simple way for kitchen staff to flag a recipe change the moment it happens, not weeks later
- A visible distinction between confirmed tags and anything still pending review
Building the habit, not just the feature
A sign-off queue only works if someone actually checks it regularly. It's worth assigning this responsibility to a specific person in your kitchen, not leaving it as a vague shared duty that nobody quite owns, and building a short weekly habit around reviewing anything still pending. A safety feature that exists on paper but never gets used in practice provides no more protection than not having it at all. Treat the review step with the same seriousness you'd treat a food safety inspection checklist, because functionally, that's close to what it is.
A practical line to draw in your own restaurant
If a mistake would be embarrassing, automation alone is probably fine. If a mistake could hurt someone, put a person in the chain before anything reaches a guest. That's a simple enough rule to apply to any tool you're evaluating, not just this one.
